Made from one of the best knife steels, perfectly heat-treated, extremely thin and sharp blade geometry, 4-point honed cutting edge, perfectly balanced and particularly ergonomic.
New in version 2.0:
The latest version of our popular Kobe series is based on the Messerforum Edition, but includes further optimizations such as improved balance or a rounded tip on the beard to reduce the risk of injury. The micro bevel from the Messerforum Edition is now available as an option on all knives and can be ordered separately.
Certified sharpness:
Ground to about 10° per side instead of the usual 15-20°. This achieves a sharpness score of under 150, which corresponds to the sharpness of a razor. Every single knife is tested and receives an individual sharpness certificate. Together with the polished blade and the special thin grind, the knife glides effortlessly through the material to be cut.
Swedish steel:
The Swedish 14C28N high-carbon stainless steel developed for razor blades is brought to a hardness of 62 Rockwell by a specially developed vacuum heat treatment and the subsequent CRYOMAX deep-freezing in liquid nitrogen. As a result, the blade is very resistant to corrosion and stays sharp for much longer.

Absolutely fantastic knife! Very thin edge, behind the blade. The blade profile is Excellent quality. Very comfortable geometry for big hand users. The 14C28N steel is great option for kitchen knife, it has fine microstructure and easy to sharpening. Good edge retention, good heat treatment. In this price range, maybe this knife is one of the best buy in the market.
Im Messerforum als Empfehlung gesehen, direkt ein "Haben-Wollen-Gef�hl" bekommen, dank der Sonderedition auch optisch dezenter gehalten, bestellt. Die bisherigen W�sthof oder VG10-Damast sind selbst frisch gesch�rft auf Diamant- bzw Wasserstein absolut kein Vergleich, die Verarbeitung h�tte ich bei dem Preis nicht erwartet.
