Our KYOTO series Meets Jürgen Schanz
After the success of our first Schanz-Edition, we are taking the next logical step. Knives from our KYOTO series that fall short of our standards for cutting performance in quality control are sent to Jürgen Schanz for additional work.
Among connoisseurs, the renowned knifemaker is one of the first addresses when it comes to professional thinning – so much so that German knife enthusiasts coined the verb „schanzen“ for it.
You feel the result with every cut: a keen edge, remarkably little resistance, and a cutting performance that stands comparison with high-end handmade Japanese knives.
Ground to Zero – for Effortless Cutting
In a zero grind, the edge is formed directly out of the primary bevel of the blade. The final honing pass is done on a whetstone at an angle of about 18° per side. The result is an exceptionally thin edge that glides through any food almost effortlessly.

NC62 NanoCarbide Steel – Superior Sharpness, German Precision
Crafted in Germany, our NC62 NanoCarbide steel features the same exceptional composition as the esteemed AEB-L steel, but with a crucial enhancement: through the innovative IngotForge process, this steel boasts an ultra-fine microstructure with minuscule, evenly distributed carbides.
With state-of-the-art vacuum hardening and the CryoMax process, which involves deep-freezing the steel at -196°C in liquid nitrogen, the blade achieves an impressive hardness of 60-62 HRC. Sie sind selten geworden, diese OlineKäufe die die Erwartungen nicht nur erfüllen, sondern übertreffen.
Liegt es an den Werbetextern auf Amphetamin oder an unserer Konsumentenmentalität, die sich inzwischen damit arrangiert hat, dass sowieso nur noch Trash geliefert wird. Dieses Messer ist eine wirklich unglaubliche Ausnahme. Alle Vorzüge hier zu schildern würde den Leser und mich nur unnötig ermüden, sondern mich auch nur unnötig lange vom Schneidebrett fernhalten. Daher nur kurz: Kauft, das oder die Messer. Solange ihr ein wirklich gutes Produkt, einem Berg Schrott, der im einzelpreis vielleicht 5,-€ günstiger ist, vorzieht, Kauft !
Der Bestellprozess ist der einzige downgrade. Man braucht schon Geduld und Glück zu den Auserwählten zu zählen. Wenn man dann das Messer in der Handhält und sich die erste Tomate quasi freiwillig zerlegt, ist das Zittern bei der Bestelllotterie aber vergessen. Mehr gibts nicht zusagen, ich muss in die Küche..... Viel Glück!
Zu meinen beiden Kobe-Messern habe ich mir noch das 'geschanzte' Gyuto aus der Kyoto-Serie gegönnt.
Mit den 'normalen' Messern der Kobe-Serie bin ich schon sehr zufrieden, die Schanz-Edition jedoch ist, was Schärfe und Schneidfreudigkeit betrifft, noch mal eine höhere Liga!
Zudem passt mir bei meinen relativ großen Händen der Kyoto Griff besser, als die Griffe der Kobe-Serie.
Preis/Leistung ist m.E. bei allen Culilux Messern über jeden Zweifel erhaben!
So besitze ich z.B. noch zwei japanische Messer der Economy-Klasse, die teurer als die Culilux Messern waren, eine ähnlich gute Schneid-Performance aufweisen, wie die 'geschanzte' Version, die aber in punkto Verarbeitung bei Griff und Klinge bei weitem nicht an die Culilux Messer (und damit meine ich alle)
heranreichen!

Von mir gibt es daher eine absolute Kaufempfehlung!
Bin mit dem Messer super zufrieden: liegt gut in der Hand, ist leicht, sehr dünn und scharf und für den Preis ein No-Brainer. Das einzige was ich noch gemacht habe ist die Klinge ein bisschen zu polieren. Fand ich aber kein Problem. Endlich auch am Wohnwagen ein richtig gutes Messer!
Seh gutes verarbeitetes Messer, extrem scharf. Wurde schnell geliefert und sogar ein Pflaster war dabei 🤣
Das Messer ist phantastisch und jeden Cent wert. Ich bin in höchstem Maße zufrieden und kann die Marke bedenkenlos weiterempfehlen. Wahrscheinlich werde ich nach und nach meine Messer durch neue von Culilux ersetzen :)
