Our KYOTO series Meets Jürgen Schanz

Sometimes small setbacks turn into great opportunities. A test batch of our new KYOTO blades did not quite live up to our high expectations in terms of cutting performance – so we turned to the best: Jürgen Schanz.

Among connoisseurs, the renowned knifemaker is the first address when it comes to precision thinning – so much so that German knife enthusiasts coined the verb „schanzen“ for it.

Ground to Zero – for Effortless Cutting

In a zero grind, the edge is formed directly out of the primary bevel of the blade. The final honing pass is done on a whetstone at an angle of about 18° per side. The result is an exceptionally thin edge that glides through any food almost effortlessly.

NC62 NanoCarbide Steel – Superior Sharpness, German Precision

Crafted in Germany, our NC62 NanoCarbide steel is based on the composition of the esteemed AEB-L steel, but the innovative IngotForge process takes it a decisive step further. That process gives the steel an ultra-fine, homogeneous microstructure with minuscule, evenly distributed carbides.

With state-of-the-art vacuum hardening and the CryoMax process, which involves deep-freezing the steel at -196°C in liquid nitrogen, the blade achieves an impressive hardness of 60–62 HRC.

    Ich verwende seit mehreren Monaten sowohl ein Sandoku Kobe als auch ein Kyoto und konnte mir eine Steigerung in Sachen Schärfe nicht vorstellen zumal beide Culilux schärfer sind als mein Zwilling Miyabi 6000 MCT. Als ich dann die Information über eine Sonderedition Schanz erhielt wurde meine Neugier geweckt und da am Monatsende noch ein paar Euros übrig waren wurde kurzerhand das "Schanz" bestellt. Die Neugier hat sich gelohnt, das Schnibbeln ist zu meiner Überraschung tatsächlich auf ein noch höheres Level gestiegen. Schanz und Culilux sei Dank!

    Einfach grandios!

    Ich bin zwar erst neu in der Szene aber dieses Messer ist sicher auch für Kenner ein Highlight. Ultraleicht und superhandlich. Die Kombination aus der dünnen Klinge und dem rasiermesserscharfen Schliff ergibt ein Schneidgefühl der Extraklasse. Die Klinge gleitet quasi widerstandslos durch das Schnittgut. Das so eine Klinge entsprechender Führung und Behandlung bedarf, versteht sich von selbst. Regelmäßiges abziehen oder ggf. nachschleifen (bei mir am Tormek T-1) und die Verwendung mit Verstand ergeben mein neues Lieblingsmesser. Ein Spezialist für ganz spezielle Anwendungen - mit einem unschlagbaren Preis-Leistungs-Verhältnis.

    Macht einfach Spaß

    Schön scharf, dünn und leicht sowie gut ausbalanciert. Super "handlich" und schneidet leicht. Zwiebel, Tomaten oder Karotten machen richtig Spaß. Hält die Schärfe bis jetzt gut. Einen "deutschen" Chef hätte ich jetzt schon mindestens einmal wetzen müssen. Das liegt aber auch daran, daß man kaum Kraft zum Schneiden braucht. Ist alles sehr "harmonisch". Damit dringt die Klinge auch kaum in das Schneidbrett ein - und bleibt damit länger scharf. Mal sehen, wann ich das erste mal wetzen oder schleifen muß. Und daß durch das "Schanzen" die Beschriftung teilweise entfernt wird stört mich nicht im Geringsten. Einfach ein tolles Messer.

    Sehr gutes Messer

    Ich wollte ein grosses dünngeschliffenes Messer und habe es bekommen. Das Schneiden damit macht sehr viel Spaß. Das Messer gefällt mir optisch sehr gut und es ist gut verarbeitet. Die Bestellabwicklung war sehr einfach und professionell, das Preis-Leistungsverhältnis ist für mich unschlagbar. Wenn ein Messer zum Arbeiten gesucht wird, das viel Spaß machen soll, würde ich es uneingeschränkt empfehlen.

    Aufgrund der dünnen Klinge werde ich es vorwiegend zum Gemüseschneiden verwenden
