The Nakiri – Ideal for Vegetables, and Not Only Those
Nakiri translates as "leaf cutter". With its tall blade, a fairly straight edge and a rounded tip, it is made for finely chopping and slicing vegetables. NC62 NanoCarbide Steel – Superior Sharpness, German Precision
Crafted in Germany, our NC62 NanoCarbide steel features the same exceptional composition as the esteemed AEB-L steel, but with a crucial enhancement: through the innovative IngotForge process, this steel boasts an ultra-fine microstructure with minuscule, evenly distributed carbides.

Das Messer ist, wie alle meine Culilux schön dünn ausgeschliffen und bietet dank Stahl und durchdachter Verarbeitung dennoch genügend Robustheit.
Jedem der auf einem Holzbrett schneidet, empfehle ich eine Mikrofase mitzubestellen oder selber anzulegen. Dadurch beißt sich das Messer nicht mehr so ins Brett.
...da bekomme ich ein Nakiri für die Hälfte des Preises, wie ich für einen neuen Griff meines Shibata bezahlen muss. (ja, ok, Custom-Made) Aber was habe ich sonst noch bekommen? Wie immer, ein sehr gut verarbeitetes Messer, scharf geschliffen und alles schön abgerundet. Trotz des etwas leicht höheren Gewichts, lässt es sich durch den guten zentralen Balancepunkt, agil und leicht handhaben. Unter dem Mikroskop habe ich ein schöne "Schneide" mit ein wenig "Restgrad" gesehen. Kurz übers Leder und jetzt war sie schon fast perfekt, da muss ich erstmal nichts weiter tun. (feiner geht immer)
Und ja, ist noch kein "Shibata", aber ganz nah dran...wie alle anderen auch.
Ich habe unterschiedliche Messer, auch mit japanischen Stahl. Alle reicht schon mit Wetzstein nachzuarbeiten und sind scharf.
Dieses Messer ist um einiges Schärfer. Sein Vorteil liegt für mich in seiner dünnen Klinge.
Damit lässt sich eigenes Brot (ist sehr weich) in dünnen Scheiben zu schneiden. Auch Käse, Serrano Schinken lässt sich dünn und leicht schneiden.
Der Griff selbst hat typisches japanischen Form und ist doch kantig für schmale, dünne Hände und beim langen Nutzen nicht für jeden Hausmensch schmerzfrei.
Ich habe auch anderen 13 cm aus der serie Kobo. Dort ist rundes Form. Kann nicht sagen welches besser ist.
Fazit: Die Klingen sind messerscharf, schneiden macht spaß. Als Hauptmesser hatte ich die leider nicht benutzt. Deswegen bisher musste auch nichts nachschleifen. Eventuell beim 3-ten Messer mache ich das und berichte.
In dieser Preisklasse unschlagbar. Fein gearbeitet, ausgewogen und ein schönes Design.
Habe diverse Messer der Kyoto Serie erworben, unter anderem das Gyoto und das Petty….
Habe alle Messer mit Mircofase bestellt und kann diesen manuellen Schliff nur empfehlen.
Ohne Microfase beißen sich die Messer doch sehr ins Schneidebrett. Konnte vor meinem Kauf ein Messer ohne Microfase testen.
Ich bin begeistert von den Kyotos, würde mir aber noch ein Gyoto und ein Sujihiki in 24 cm ohne Schanz Edition wünschen.
Auch ein Brotmesser dieser Serie würde mir sehr gefallen.
