Micro Bevel Instead of a Full Regrind: How to Preserve Cutting Ability

Last time it became clear: eventually, honing stops helping. The edge is too rounded, and only grinding restores a genuine tip. The obvious reaction is to reset the entire bevel from scratch — the very surface responsible for cutting ability. Does it really have to be that way?


What a Micro Bevel Is

A micro bevel is a tiny second bevel, usually just a few tenths of a millimeter wide, applied directly at the edge at a slightly steeper angle than the blade geometry behind it. Instead of regrinding the entire primary bevel, only this paper-thin strip gets worked — exactly the zone already responsible for sharpness, not for cutting ability.



Why That Protects Cutting Ability

The primary bevel — the shape that decides how easily the blade glides through the carrot — stays practically untouched by a micro bevel. Only a minimal amount of material is removed at the very tip to create a fresh edge. Because that area is so small, even repeatedly renewing the micro bevel barely changes the geometry behind it in any measurable way. A full regrind, by contrast, removes a slice of the primary bevel with every pass — and that's exactly what gradually shifts the shoulder, the transition from thick to thin, over time (more on that in Part 4).


How to Apply a Micro Bevel in Practice

On a fine sharpening medium (roughly in the 3000–8000 grit range), the blade is first set only up to 5 degrees per side steeper than the actual grind. A few light strokes are usually enough to produce a fresh, clean tip. If that eventually stops helping, the angle gets increased a bit further next time — step by step, up to about 20 degrees per side at most. Why 20°? Because a larger angle fundamentally cuts harder than a narrow one, and past 20° cutting performance drops noticeably.


The Limit of the Micro Bevel

The micro bevel, too, grows a little with every repetition — just many times slower than with a full regrind. Once the maximum angle of 20 degrees is reached and the micro bevel has grown past 0.3 mm wide, cutting ability starts to suffer. That's when a new full regrind is due. Until then, though, often several years pass under normal use — years in which cutting ability stays practically fully intact.
