Take two wildly different test subjects: a tomato and a carrot. The first knife glides through the carrot effortlessly, almost no force required — but it nearly fails on the tomato's thin skin, where the fruit slides away or gets crushed instead of being cleanly split open. A second knife does exactly the opposite: it practically falls through the tomato, slicing the skin so cleanly — but with the carrot, you almost need a hammer to help it along, until the vegetable finally gives way with an audible crack. A contradiction? Not really. The two knives simply excel in two different disciplines: one has more cutting ability, the other is sharper.
What Is Sharpness?
Sharpness is a property of the edge itself — that very last, paper-thin sliver of steel right at the blade's cutting line. It depends on how finely that sliver tapers off, how narrow the edge angle is, and how cleanly and burr-free it has been finished. The nice thing about sharpness is that it can be measured objectively — with the BESS test, for instance, which states in grams how much force it takes to sever a standardized test cord — or without any equipment at all, simply by how effortlessly a sheet of paper tears with no pressure behind it. The tomato is the classic real-world test here: if the skin tears or slides away instead of opening cleanly, sharpness is lacking, no matter how the blade behind it is ground.

What Is Cutting Ability?
Cutting ability, by contrast, is hard to pin down in a single number. There's no standardized test and no instrument for it — it's more of a feeling that only becomes apparent while you're actually cutting, and it describes the blade's entire path through the food, not just the edge's first point of contact. That path depends almost entirely on geometry: if the blade stays slim behind the edge, it glides through with little resistance. If it thickens quickly, it wedges its way in instead — and with the carrot, that's exactly what you hear and feel as a crack, when the firm vegetable gets forced apart rather than cleanly divided. That's why the carrot is the perfect counterpart to the tomato as a test: it's firm enough that the first point of contact no longer decides the outcome — what counts is the blade's entire path through it.

Why the Two Are Independent
Sharpness is created by sharpening the edge. Cutting ability is established much earlier, when the blade's shape is ground, long before an edge is even put on it. In theory, a knife can therefore have any combination of the two: sharp and full of cutting ability at once (arguably the goal), sharp but nothing more, full of cutting ability but not sharp — or, in the worst case, neither. Knowing the difference lets you judge a knife more precisely: is the problem with the edge, or with the blade behind it?
