In the first installment, we got to know sharpness and cutting ability as two independent properties: one at the edge, the other in the blade shape behind it. Cut with the same knife for a while, and you'll soon notice the tomato getting increasingly stubborn — yet the carrot still cuts as effortlessly as on day one. Why does one fade while the other stays?
What Happens to Sharpness While You Cut
The edge is the most vulnerable part of the blade — a sliver of steel that at its very tip often measures only a few hundred nanometers. That's exactly where all the force of a cut concentrates on a tiny area, and exactly where wear begins: friction against the cutting board microscopically rounds off the edge, hard or frozen ingredients can leave individual micro-chips, and even soft food contributes to wear, cut by cut. Then there's edge rolling: lateral forces bend the paper-thin tip sideways instead of wearing it away. Each individual effect is imperceptible on its own. Added together, though, it explains why the tomato no longer splits quite as cleanly after the twentieth onion as it did that morning — and why sharpness is fundamentally a snapshot, not a fixed state.
Why the Blade Geometry Stays Untouched
Cutting ability, by contrast, sits in a completely different place: in the primary bevel — the shape of the blade already a few millimeters behind the edge. This zone has almost no contact with the actual cutting action and picks up practically no wear at all. The abrasion that costs you sharpness happens in a zone a thousand times smaller than the entire blade geometry — see Fig. 1 from Part 1. As long as that wear doesn't grow into the area behind it, the shape responsible for cutting ability stays untouched. The carrot simply doesn't notice.
Why Honing Beats Reaching for the Stone Right Away
Notice sharpness fading, and the reflex is often to grab the sharpening stone and reset the edge from scratch. That costs cutting ability needlessly — and it's almost always avoidable. Hone a knife regularly instead, ideally before sharpness has noticeably faded, and it stays sharp for a very long time without cutting ability suffering at all. This works on leather, a fine honing steel, or a fine stone: a few strokes at the existing angle are usually enough to bring the edge back in line. Only once the edge is already too rounded does honing stop helping — then grinding is needed to establish a genuine tip again, and that's exactly what can reach into the geometry at the shoulder.
