The knives of our KOBE Series  - the advantages of Western and Japanese knives combined in perfection. Designed for maximum cutting performance.

NEW HANDLE MATERIAL:

Almost all knives in the KOBE Series (Petty, Santoku, 20 cm Chef's Knife, Slicing Knife) have received a new handle material. G10 is an exceptionally durable material known for its excellent dimensional stability. The 24 cm Chef's Knife is still available with the Micarta handle.

The Messerforum Edition of our KOBE Series:

Based on proposals of the members of Messerforum.net, this special edition sports a more subtle design and has a micro bevel on the cutting edge at an angle of 15-20° per side.

NEW: The Knife Forum edition also received the new G10 handles. Additionally, the middle rivet was adorned with the laser logo from the regular KOBE series.

First-class cutting performance in an attractive shape

The blade is made of Swedish 14C28N high carbon stainless steel, which is considered by experts as perhaps the best steel for kitchen knives. This Chef's knife is not only very versatile and visually appealing, but also impresses professionals and hobby chefs alike with its extreme sharpness and perfect ergonomics in all cutting applications, be it chopping, slicing or peeling, and for all kind of food - meat, fish, vegetables, fruits or herbs.

SWEDISH 14C28N PREMIUM STEEL

The Swedish 14C28N high carbon stainless steel has been developed for use in razor blades. It not only is very finely grained, but with HRC 62

extremely hard, considerable harder than the HRC 57 common for Western knives or HRC 60 usually seen in Japanese blades.
The Nitrogen enhanced blades have undergone a CRYOMAX ice-hardening at 196°C / -321°F and are thus very corrosion resistant and durable, despite of the high carbon content of the steel.

EXTREMELY SHARP KATANA EDGE

The blade has been sharpened in the Japanese "Honbazuke" process, also used for the legendary Katanas. The wavy design close to the edge resembles the Hamon line of a Katana.

The cutting edge has been hand-sharpened by skilled craftsmen in 4 different production steps, taking it to an acute angle of 10° per side and a fine mirror polish.

As a result, the blade smoothly glides through food without much force having to be applied.

STAYS SHARP FOR A LONG TIME

An enlargement under the microscope exposes the fine-grained microstructure of the steel, with the small and evenly spread carbides that are a special feature of the steel. In combination with the high hardness of HRC 62, it allows the edge to be sharpened to very acute angles, which the steel can easily hold without chipping, so that a high sharpness can be maintained for a very long time.

THIN BLADE GEOMETRY

The blade has been ground to an extremely thin and convex geometry and given a smooth satin finish, to minimise cutting resistance and enhance the cutting feeling to one of ultimate sharpness.

The handle made of durable and stable G10 is not only perfectly ergonomic, but also contributes to the perfect balance of the blade, for long prep sessions without fatigue.

PERFECT FIT & FINISH

All edges and corners on the knife have been rounded and polished, for pain-free cutting even in long cutting sessions or when applying force for cutting through harder objects.

Each knife is sharpness-tested and receives a sharpness certificate* with the achieved sharpness score.

We guarantee a score lower than 150 on the sharpness scale, which is on the same level than a utility razor.
